6 large potatoes, peeled and diced
2 large onions, sliced thinly
4 cups vegetable or chicken broth (or water with a bouillon cube)
Instructions:
Prepare the vegetables: Peel and dice the potatoes into bite-sized pieces. Thinly slice the onions.
Combine in a slow cooker: Place the diced potatoes and sliced onions in the slow cooker. Pour the broth over them.
Cook: Cover the slow cooker and set it to cook on low for 6-7 hours or until the potatoes are tender and the onions are soft and caramelized.
